(That was a rhetorical question &#8211; there isn\u2019t.) With berries, plums, and peaches galore, fresh recipes are endless. Our newest summer obsession? Peach jam.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">You guys loved our <\/span><a href=\"https:\/\/www.befresh.ca\/wrdp\/blog-low-sugar-cherry-jam\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">low-sugar cherry jam recipe<\/span><\/a><span style=\"font-weight: 400;\">, and now we\u2019re moving onto the next wave of summer fruits &#8211; peaches being one of them. Peach jam is a nice alternative to some other popular jams, raspberry or strawberry, since it\u2019s on the sweeter side, goes well with a wide variety of foods, and has no pesky seeds (your teeth will thank you). Peach season is just beginning, so if you take note of this recipe, you can have fresh peaches and jam all summer long!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Most fruit jams are made with pectin for thickening, but fruit jam can also be made without pectin and instead with fresh fruit, lemon juice and sugar to create a similar effect. Pectin, a naturally occurring substance, requires larger quantities of sugar to thicken. Since this recipe doesn\u2019t have pectin, it doesn\u2019t need as much sugar. That being said, it might be a bit looser and less vibrant in colour than jam with pectin in it &#8211; but it\u2019s still delicious!<\/span><\/p>\n<h1><strong><span style=\"font-size: 18px;\">Easy Low-Sugar Peach Jam Recipe\u00a0<\/span><\/strong><\/h1>\n<h2><span style=\"font-weight: 400; font-size: 16px;\">Ingredients:<\/span><\/h2>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">7 cups of peaches<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc cup of lemon juice<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 cups of sugar<\/span><\/li>\n<\/ul>\n<h2><span style=\"font-weight: 400; font-size: 16px;\">Instructions:<\/span><\/h2>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Peel and slice peaches.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Place peach slices in a large pot.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Add lemon juice to peaches and mash with a potato masher. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Stir in sugar and bring to a boil.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Continue to boil and stir for about 25-30 minutes until jam thickens or reaches 8 degrees F above the boiling point of water (test by using a candy thermometer &#8211; \u00a0use <\/span><a href=\"http:\/\/portlandpreserve.com\/TestingTheJellyPoint.pdf\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">this PDF<\/span><\/a><span style=\"font-weight: 400;\"> for reference!). To test the jam\u2019s thickness, use the <\/span><a href=\"http:\/\/portlandpreserve.com\/TestingTheJellyPoint.pdf\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">\u201ccold plate\u201d method<\/span><\/a><span style=\"font-weight: 400;\">. \u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Once thick enough, transfer jam to sterilized canning jars. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Cap with lids and bands and ensure that you don\u2019t cap them too tight (until just finger-tight). Process in a hot water bath for 10 minutes.
