Not only is it abundant in asparagus, fresh greens, and tomatoes, but rhubarb is hot off the shelves and ready to go. Yes, that\u2019s right, rhubarb people!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Most people associate rhubarb with quintessential rhubarb crumble, but there\u2019s so much more to this stalky veggie than meets the eye\u2026 er\u2026 taste buds. While we\u2019ll never turn down a good crumble, we love putting modern twists on classic produce. Rhubarb doesn\u2019t have to be restricted to a 1950\u2019s British dessert: we\u2019re talking about a strawberry rhubarb chia pudding. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">This dish covers all the bases. Strawberries add a fresh sweetness that blend perfectly with tangy rhubarb. Combined with creamy coconut milk, textured chia seeds, and a touch of honey (or maple syrup if you\u2019re vegan), this mixture is the perfect combo of sweet, tangy, and velvety goodness. Drooling yet?<\/span><\/p>\n<h1><strong><span style=\"font-size: 18px;\">Strawberry Rhubarb Chia Pudding<\/span><\/strong><\/h1>\n<p><span style=\"font-weight: 400;\">Enjoy this for breakfast, a snack, or dessert, and serve with slivered almonds or shredded coconut on top. This recipe<\/span><b> serves 2.<\/b><\/p>\n<h2><strong><span style=\"font-size: 16px;\">Ingredients:<\/span><\/strong><\/h2>\n<p><em><span style=\"font-weight: 400;\">Compote<\/span><\/em><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 cup rhubarb diced<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 cup strawberries<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tsp sweetener (either honey or maple syrup)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tsp vanilla extract<\/span><\/li>\n<\/ul>\n<p><em><span style=\"font-weight: 400;\">Chia Pudding<\/span><\/em><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00be cup coconut milk<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u2153 cup non-dairy milk (I like cashew or homemade almond for extra creaminess)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u2153 cup chia seeds<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tsp sweetener (either honey or maple syrup)<\/span><\/li>\n<\/ul>\n<h2><strong><span style=\"font-size: 16px;\">Instructions:<\/span><\/strong><\/h2>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Whisk chia seeds, coconut milk, 1 tsp sweetener, and vanilla extract in a bowl. Set aside and let thicken. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">In a medium saucepan, add rhubarb, strawberries, sweetener, and vanilla and place on low &#8211; medium heat. Stir well and cook for about 10-15 minutes until boiled down. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Remove from heat and let cool.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Once cooled, scoop some of the chia pudding into a separate cup. Top with the strawberry rhubarb compote.
