What goes well with all those things? Chickpea salad. Think of it as similar to tuna salad, but instead of tuna we use mashed chickpeas, which add mild flavour and thick texture. That combined with our <\/span><a href=\"http:\/\/www.befresh.ca\/blog-vegan-aquafaba-mayo\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">vegan Aquafaba Mayo<\/span><\/a><span style=\"font-weight: 400;\">, chopped celery, fresh lemon juice, onion and lots of garlic makes for a pretty tasty combo\u2014ideal for any summertime venture.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I like to enjoy this with crackers, on a bagel, in a sandwich, or in a wrap. It\u2019s also enjoyable enough to eat on its own. The possibilities are (almost) endless.<\/span><\/p>\n<h1><span style=\"font-size: 18px;\"><b>Vegan Chickpea Salad<\/b><\/span><\/h1>\n<h2><span style=\"font-weight: 400; font-size: 16px;\">Ingredients:<\/span><\/h2>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 425g can of chickpeas<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Juice of \u00bd lemon, plus zest if you like citrusy flavour<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">3 tablespoons of our <\/span><a href=\"http:\/\/www.befresh.ca\/blog-vegan-aquafaba-mayo\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">vegan Aquafaba Mayo<\/span><\/a><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd cup finely chopped celery<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd cup red onion, finely chopped<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc cup diced dill pickle<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc cup finely chopped green pepper<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 \u00bd cloves of garlic<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 teaspoon mustard<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 \u00bd tsp minced fresh dill<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc teaspoon fine fresh sea salt, to taste<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Freshly ground black pepper<\/span><\/li>\n<\/ul>\n<h2><span style=\"font-weight: 400; font-size: 16px;\">Instructions:<\/span><\/h2>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">In a large bowl, mash chickpeas well with a potato masher. Mash until it\u2019s flaky in texture.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Stir in chopped celery, onion, pickles, peppers, vegan mayo, and garlic until well mixed. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Add mustard and dill, and then flavour with lemon juice, salt, and pepper. Adjust the flavour as needed (more lemon for more citrus, more salt to enhance flavour, etc.) Sometimes more mustard is necessary too.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Serve alone with freshly toasted bread, or turn it into a sandwich with a leaf or two of lettuce. Add extra veggies like cucumber, sprouts, or tomato to make it more sandwich-y.
