Interestingly enough though, they don\u2019t have origins in Jerusalem and they\u2019re not related to artichokes&#8230; Where the name \u201cJerusalem artichoke\u201d comes from is a mystery.<\/span><\/p>\n<p><span style=\"font-weight: 400;\"> If anything, sunchokes are more similar to potatoes, mostly in the sense that they\u2019re root tubers with a similar flavour profile. They\u2019re nutty and savoury with a slight artichoke-y taste &#8211; like a potato\/artichoke cross &#8211; and are best used as other tubers are: mashed, in soups, pureed, or roasted. <\/span><\/p>\n<h1><span style=\"font-size: 18px;\"><strong><span style=\"text-decoration: underline;\">Why you should eat sunchokes:<\/span><\/strong><\/span><\/h1>\n<p><span style=\"font-weight: 400;\">The great thing about sunchokes? They\u2019re incredibly high in <\/span><a href=\"https:\/\/about.spud.com\/blog-gut-probiotics-prebiotics\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">prebiotics<\/span><\/a><span style=\"font-weight: 400;\">, which are what probiotics need to \u201cfeed\u201d on. They\u2019re actually one of the <\/span><a href=\"https:\/\/www.healthline.com\/nutrition\/19-best-prebiotic-foods\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">best sources of prebiotics<\/span><\/a><span style=\"font-weight: 400;\">! The bad thing about sunchokes? They contain inulin, which &#8211; when consumed <\/span><b>raw <\/b><span style=\"font-weight: 400;\">&#8211; can lead to serious gas and bloating. As such, they\u2019ve been unofficially titled \u201cfartichokes\u201d. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">While inulin sensitivity varies from person to person, it\u2019s best to avoid eating sunchokes raw altogether. Here are 2 tasty cooked sunchoke recipes that are sure to boost your gut health and keep you regular, but hopefully without any fartichoke side effects. <\/span><\/p>\n<h2><span style=\"text-decoration: underline;\"><strong><span style=\"font-size: 16px;\">Roasted Sunchokes With Garlic and Thyme<\/span><\/strong><\/span><\/h2>\n<p><span style=\"font-weight: 400;\">If you\u2019re bored of classic roast taters, try roasted sunchokes. They\u2019re the perfect trendy accompaniment to your weeknight dinner, potluck, or Sunday roast. <\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-weight: 400;\">Ingredients:<\/span><\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\u00bd pounds sunchokes, cut in half<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tablespoons olive oil<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Plenty of coarse salt and cracked pepper, to taste<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">3 sprigs of fresh thyme, leaves removed<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">3 to 4 cloves of garlic, peeled and left whole<\/span><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-weight: 400;\">Instructions:<\/span><\/span><\/p>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Preheat oven to 425 degrees F. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Wash and rinse sunchokes. Cut in half.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Add sunchokes and garlic to a baking sheet, toss with olive oil, and then sprinkle with salt, pepper, and thyme. Turn sunchokes cut side down and bake for 30 ish minutes. Be sure to toss a few times! You\u2019ll know they\u2019re done when they\u2019re crispy on the outside, tender on the inside, and a nice golden brown. <\/span><\/li>\n<\/ol>\n<h2><span style=\"text-decoration: underline; font-size: 16px;\"><strong>Sunchoke Chips<\/strong><\/span><\/h2>\n<p><span style=\"font-weight: 400;\">A healthier alternative to potato chips (although nothing can replace Hardbite), sunchoke chips offer a fresh taste and flavour to classically fried chips. <\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-weight: 400;\">Ingredients:<\/span><\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd pound large sunchokes<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Lots of sea salt (over 1 tablespoon), unless salt doesn\u2019t sit well with you<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tablespoon EVOO<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 teaspoons finely chopped rosemary, ideally fresh but dried works too<\/span><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-weight: 400;\">Instructions:<\/span><\/span><\/p>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Preheat oven to 350. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Slice sunchokes as thin as possible. Not too thin though &#8211; we don\u2019t want any hand injuries during the process! <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Place slices on paper towels in a single layer. Cover with paper towel and let them sit for 15 minutes to soak up excess liquid. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">After, toss sunchoke slices in a bowl with extra virgin olive oil and rosemary. Place in a single layer on a parchment paper lined baking sheet, sprinkle lots of S&amp;P, bake, and flip halfway.
