Enjoy!<\/span><\/p>\n<h1><span style=\"font-size: 18px;\"><b>Easter Recipes<\/b><\/span><\/h1>\n<h2><span style=\"text-decoration: underline;\"><span style=\"font-size: 16px;\"><strong><a href=\"https:\/\/about.spud.com\/jennifer-brotts-spudhappyheart-carrot-cake-recipe\/\" target=\"_blank\" rel=\"noopener\">Vegan Carrot Cake<\/a><\/strong><\/span><\/span><\/h2>\n<p><span style=\"font-weight: 400;\">If Easter isn\u2019t the time for carrot-related foods, I don\u2019t know what is. If you\u2019re having a family dinner this year, try serving this cake for dessert. Your guests will be blown away. If you\u2019re celebrating with a family brunch, try making these into little cupcakes instead. To do so, simply grease muffin tins, pour in the batter, and check on the muffins after about 30 minutes. Keep baking\/checking until you can insert a toothpick and it comes out clean. <\/span><\/p>\n<h2><span style=\"font-size: 16px;\"><strong><span style=\"text-decoration: underline;\">Sunny Citrus Chia Bowls<\/span><\/strong><\/span><\/h2>\n<p><span style=\"font-weight: 400;\">These bright and shiny citrus bowls are fresh and rejuvenating &#8211; perfect for a light breakfast or dessert. Its bright colours are reminiscent of colourful dyed eggs, and its fresh flavour profile kickstarts you into spring. It\u2019s also healthy, fibre-rich, and full of good fats, so it\u2019ll keep your blood sugar from going crazy when you gorge on chocolate later. <\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-weight: 400;\">Ingredients:<\/span><\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc heaping cup chia seeds<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 cup non-dairy milk<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd cup coconut milk\/cream<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tablespoons maple syrup or honey, to taste<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tablespoon lemon juice (or other citrus juice &#8211; lime, orange, or grapefruit &#8211; or a combo &#8211; are nice too!)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">pinch of sea salt<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">A pinch of citrus zest\u00a0<\/span><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-weight: 400;\">Toppings:<\/span><\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Orange segments<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Raspberries<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Mango (optional &#8211; if using limes, we recommend topping with mango)<\/span><\/li>\n<li>Grapefruit segments (optional)<\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Chopped almonds<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Maple syrup, for serving<\/span><\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-weight: 400;\">Instructions:<\/span><\/span><\/p>\n<ol>\n<li><span style=\"font-weight: 400;\">In a large jar or bowl, stir together the chia seeds, the non-dairy milk, the coconut milk\/cream maple syrup, citrus juice, salt, and zest.<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Chill for 6 hours or overnight, until the chia seeds are plump and the pudding is thick.
