This was utterly delicious, but not very good for my insides. Nowadays, while adult me still loves dough, I have learned to eat in a way that feels better for my body; which often doesn\u2019t involve raw eggs and refined sugar. While I will never give up cookie dough, I\u2019ve found a solution to satisfy my cravings that makes me feel alright and still indulge. Introducing: chickpea cookie dough.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Okay, I know what you might be thinking: \u201cThat sounds incredibly weird and disgusting, what the heck are you talking about.\u201d But hear me out. Chickpeas are actually quite mild in flavour, and bind everything together like eggs otherwise would. Peanut butter masks any chickpea-y flavour, and dark chocolate chips add that classic cookie dough touch. While it doesn\u2019t taste exactly like cookie dough, it\u2019s a pretty darn good alternative.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Read on for this egg-free, vegan, gluten-free, and refined sugar-free cookie dough recipe. <\/span><\/p>\n<h1><strong><span style=\"font-size: 18px;\">Chickpea Cookie Dough<\/span><\/strong><\/h1>\n<p><span style=\"font-weight: 400;\">Enjoy this by the spoonful. No salmonella concerns here!<\/span><\/p>\n<h2><strong><span style=\"font-size: 16px;\">Ingredients:<\/span><\/strong><\/h2>\n<ul>\n<li><span style=\"font-weight: 400;\">1 can of chickpeas, drained and rinsed (remove any skins if possible! This helps make it into a smoother dough)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2-3 tbsp oats<\/span><\/li>\n<li><span style=\"font-weight: 400;\">Up to \u00bc cup almond milk, only if needed<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bd cup peanut butter<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 teaspoons vanilla extract<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2\u00bd tablespoons maple syrup<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bd teaspoon cinnamon\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u215b tsp salt<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tablespoon ground chia seeds<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u2153 cup dark chocolate chips (if you don&#8217;t have chocolate chips, dark chocolate chunks work too)<\/span><\/li>\n<\/ul>\n<h2><strong><span style=\"font-size: 16px;\">Instructions:<\/span><\/strong><\/h2>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Blend all ingredients in food processor (except for chocolate chips). <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Once fully blended and smooth as a sweet doughy dream, transfer to a mixing bowl. Fold in the chocolate chips. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Enjoy! After eating, be sure to keep this in an airtight container in the fridge.
