My go-tos are usually a salad with a dijon dressing or a big batch of roast veggies, since these accommodate most dietary restrictions, are tasty as heck, and they don\u2019t take long to make. Recently though, I\u2019ve gotten into another quick and easy favourite: smashed potatoes. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">No, not roasted potatoes. Those are an entirely different almost fries-y dish. And definitely not mashed. Those are just,\u00a0well, mashed. I\u2019m here to tell you about SMASHED potatoes: a crispy on the outside, soft on the inside, roasted side. They\u2019re easy, require under 10 ingredients, few dishes, and use most ingredients that you probably have on hand. Perfect for last-minute cooking. Plus they\u2019re freakin\u2019 delicious. With these taters, you can mindlessly whip up a favoured side, win over your guests\u2019 hearts, and &#8211; more importantly &#8211; beat out Aunt Jo\u2019s mashed potatoes as \u2018the favourite plate\u2019 at Sunday dinner. They\u2019re <\/span><i><span style=\"font-weight: 400;\">that <\/span><\/i><span style=\"font-weight: 400;\">good.<\/span><\/p>\n<h1><span style=\"font-size: 18px;\"><b>Crispy Garlicky Smashed Potatoes<\/b><\/span><\/h1>\n<p><span style=\"font-weight: 400;\">Since they&#8217;re boiled first, these taters are crispy on the outside and slightly soft on the inside. Extra S&amp;P enhances the flavour of the garlic, and rosemary adds a fresh touch. Also, be sure to use smaller potatoes. They\u2019re easier to smash and are overall tastier. \u00a0<\/span><\/p>\n<h2><strong><span style=\"font-size: 16px;\">Ingredients:<\/span><\/strong><\/h2>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">24 ounces (1.5lb) Yukon gold yellow potatoes<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tbsp olive or avocado oil<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">3 cloves garlic (minced)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tbsp rosemary (preferably fresh, but dried works too)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Lots of sea salt and black pepper<\/span><\/li>\n<li>Optional: top with a yogurt\u00a0sauce<\/li>\n<\/ul>\n<h2><strong><span style=\"font-size: 16px;\">Instructions:<\/span><\/strong><\/h2>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Preheat oven to 450 degrees F. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Cover a baking sheet with parchment paper (or lightly grease with oil).<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Bring a large pot of water to a boil. Once boiling, add potatoes and cook for about 15-20 minutes or until tender. Test with a fork.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Place boiled potatoes on the baking sheet. With a fork, carefully press each potato until flattened (but still in one piece!). Drizzle with olive oil, minced garlic, alllll the salt and pepper, and rosemary. Make sure each tater is evenly covered.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Place in oven and bake for 18-20 minutes until golden brown and crispy. Remember: the crispier the better.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Serve on a platter and drizzle with sauce if using. Enjoy! Then sit back, relax, and wait for your guests to reach for seconds.
