I\u2019m unsure if it\u2019s the luxury of sleeping in and having time to prepare an elaborate meal, or if it\u2019s because my partner loves savoury breakfasts and we can make food together, but come Saturday, savoury breakfasts steal the show. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">My go-to savoury breakfasts were always <\/span><span style=\"font-weight: 400;\">eggs<\/span><span style=\"font-weight: 400;\">. While I still love them, I recently ventured into the world of tofu scrambles (just to <\/span><i><span style=\"font-weight: 400;\">mix <\/span><\/i><span style=\"font-weight: 400;\">it up. Get it?!). The verdict? Amazing. Tofu scrambles might seem intimidating, but they\u2019re surprisingly easy, hearty, and cheap. An added bonus: they look almost identical to scrambled eggs, which even fooled my egg-obsessed boyfriend. <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Here\u2019s a how-to guide on how to make the perfect veggie-laden, protein-packed, tofu scramble for vegans and non-vegans alike. This dish is:<\/span><\/p>\n<ul style=\"text-align: justify;\">\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Savoury<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Has a bit of a kick (from the <\/span><span style=\"font-weight: 400;\">turmeric<\/span><span style=\"font-weight: 400;\"> and cayenne)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Filling<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Fresh<\/span><\/li>\n<\/ul>\n<h1 style=\"text-align: justify;\"><span style=\"text-decoration: underline;\"><strong><span style=\"font-size: 18px;\">Turmeric Tofu Scramble Recipe<\/span><\/strong><\/span><\/h1>\n<h2 style=\"text-align: justify;\"><strong><span style=\"font-size: 16px;\">You&#8217;ll need:<\/span><\/strong><\/h2>\n<ul style=\"text-align: justify;\">\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/2 package (15 oz.) organic firm tofu (sprouted is ideal &#8211; it\u2019s easier on your digestive system)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tablespoons nutritional yeast <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd clove garlic<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 teaspoon turmeric powder (divided)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/4 teaspoon cayenne pepper<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Freshly ground black pepper <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/2 teaspoon fine sea salt<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tablespoons non-dairy milk <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Oil for cooking (we like avocado oil)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Any veggies that are tasty sauteed. I like kale, tomatoes, mushrooms, or onions, but use whichever ones you have lying around. <\/span><\/li>\n<\/ul>\n<h2 style=\"text-align: justify;\"><strong><span style=\"font-size: 16px;\">To make:<\/span><\/strong><\/h2>\n<ol>\n<li style=\"font-weight: 400; text-align: justify;\"><span style=\"font-weight: 400;\">Drain tofu from the package. Pat with a paper towel to remove excess moisture.<\/span><\/li>\n<li style=\"font-weight: 400; text-align: justify;\"><span style=\"font-weight: 400;\">First, start sauteing your veggies. If you\u2019re using onions, saute those first for about a minute or so. Add \u00bd tsp of turmeric, a pinch of cayenne pepper, and salt and pepper to taste. If you have mushrooms, add those next. After a few minutes, add the garlic and tomatoes. After about 5 more minutes, add your kale. Saute for 30 seconds or so, remove from heat and set aside. \u00a0<\/span><\/li>\n<li style=\"font-weight: 400; text-align: justify;\"><span style=\"font-weight: 400;\">Now back to the tofu. Break it into small crumbs and add it to a bowl. Then add your nutritional yeast, your other \u00bd tsp of turmeric, pepper and non-dairy milk. Stir well. <\/span><\/li>\n<li style=\"font-weight: 400; text-align: justify;\"><span style=\"font-weight: 400;\">Add tofu to a pan on medium-high heat with a tablespoon of oil. Cook for about 3-4 minutes stirring occasionally. <\/span><\/li>\n<li style=\"font-weight: 400; text-align: justify;\"><span style=\"font-weight: 400;\">Mix in your veggies. Add more spices if need be.
