{"id":4543,"date":"2017-11-23T10:29:03","date_gmt":"2017-11-23T18:29:03","guid":{"rendered":"http:\/\/www.befresh.ca\/?p=4543"},"modified":"2017-11-23T12:43:39","modified_gmt":"2017-11-23T20:43:39","slug":"blog-water-kefir","status":"publish","type":"post","link":"https:\/\/www.befresh.ca\/wrdp\/blog-water-kefir\/","title":{"rendered":"What&#8217;s Water Kefir And Why Should You Drink It?"},"content":{"rendered":"<p>Traditionally, kefir originated as a <a href=\"https:\/\/about.spud.com\/blog-probiotics-common-cold\/\" target=\"_blank\" rel=\"noopener noreferrer\">probiotic-rich<\/a> milk drink in the Caucasus Mountains. It\u2019s been around since the 1800s and was made by mixing cow, goat, or sheep milk with a probiotic culture. When it comes to taste and texture,\u00a0it resembles thin yogurt (or a \u201cmilk soda\u201d as some describe it) and because of this, many add milk kefir to sourdough bread, as a substitute for buttermilk in baking, and in <a href=\"https:\/\/about.spud.com\/?s=soup\" target=\"_blank\" rel=\"noopener noreferrer\">soups<\/a>. While milk kefir is still common today, especially in parts of Eastern Europe and Asia, we\u2019re also big fans of a dairy-free variety: water kefir.<\/p>\n<h1><span style=\"font-size: 18px;\"><strong>What is water kefir?<\/strong><\/span><\/h1>\n<p><a href=\"https:\/\/about.spud.com\/blog-kombucha-kefir\/\" target=\"_blank\" rel=\"noopener noreferrer\">Water kefir is a naturally fizzy fermented beverage, similar to kombucha.<\/a>\u00a0It&#8217;s rich in probiotics, so it&#8217;s great for gut health. In order to make kefir, add a SCOBY (symbiotic culture of bacteria and yeast) into sugar water and fruit. Unlike kombucha, the SCOBY does not resemble a legless jellyfish. Instead, it slightly resembles cauliflower (see photos below). These are known as \u201ckefir grains\u201d. These kefir grains &#8211; which are not actually grains! &#8211; metabolize the sugar into good bacteria. Although the grains\u00a0require sugar, they \u201ceat\u201d it up, so a small amount ends up in the final product. This makes it quite low in sugar!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-48431\" src=\"http:\/\/about.spud.com\/wrdp\/wp-content\/uploads\/2017\/11\/Untitled-design-26-196x300.jpg\" alt=\"\" width=\"196\" height=\"300\" \/><\/p>\n<p><i>Water kefir grains. Note the jellyfish-type blob.<\/i><\/p>\n<h2><span style=\"font-size: 16px;\"><strong>Why should I consume it?<\/strong><\/span><\/h2>\n<p>Water kefir is great for\u00a0many reasons, especially for its health benefits and yummy taste.<\/p>\n<ul>\n<li>Since it&#8217;s rich in probiotics, kefir boosts our immune systems. It contains plenty of vitamins, such as vitamin A, B2, B12, D, and K. This supports proper digestion\u00a0and warns off harmful bacteria and viruses, too.<\/li>\n<li>Many studies also link kefir to cancer prevention. A 2017 study\u00a0shows that <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/28956261\" target=\"_blank\" rel=\"noopener noreferrer\">kefir can prevent tumour formation<\/a>.<\/li>\n<li>Since water kefir is caffeine-free, dairy-free, gluten-free, and low in sugar, almost anyone can drink it. <a href=\"http:\/\/nourishedkitchen.com\/water-kefir\/\" target=\"_blank\" rel=\"noopener noreferrer\">Kids too<\/a>!<\/li>\n<li>When it comes to taste, it doesn&#8217;t disappoint. It&#8217;s lighter and tastier than kombucha, so it&#8217;s like a bubbly soda that\u2019s actually <i>good <\/i>for you. If you\u2019re making it at home, try adding different fruits!
